Shrimp, Corn, & Pepper Whole Wheat Pasta


Oh my gosh, guys!  I’m actually about to post a recipe…stop the press!

Aside from still battling nausea throughout most of my days, all I want to do is sit and eat.  Mostly anything covered in a blanket of melting, gooey cheese.  Isn’t it refreshing to know that some things never change?  I think cheese is my cure all.

When I’m exhausted because one of our horses tried to die on us last night (he didn’t, DON’T WORRY), and didn’t sleep well because my man was out dealing with said horse, and I was tossing and turning waiting for him to come home and give me the news, then when said news is good news, I cannot for the life of me fall asleep.  I sat and worried, and worried.  I just really wanted to yell, hormones go back to bed!  Moral of this story, cheese will make life new again…

Cheesy Whole Wheat Pasta With Garbanzo Beans & Wilted Greens


I think I’m shriveling up.

I’m withering away with ideas and inspiration for my little food hub corner of my world.  I’m burnt out, dwindling down to zilch for ideas.  I think I’m becoming stale.  For this, I might go M.I.A from time to time.

I like to chalk this up to pregnancy brain, and blame it on my baby.  She needs all my extra energy, thoughts, feelings, and (sadly) inspiration.  So she’s taken over for the time being, and I’m just along for the ride.

Peach Raspberry Crumble Pie


It’s Friday and for that we need to bake a pie.

Summertime pie topped off with an addicting crumble topping.  It’s like a pie and crisp fell in love, got married, and had babies.  It is everything that is right with this world.

I love that this recipe is really versitle too.  You can either use fresh or frozen peaches and raspberries, depending on what is in season.  No complicated mixing, just a few simple ingredients and you’re off an running.

Southwest Stuffed (Sweet) Potato Skins


Hello, lover.  Hello summertime Monday.  Welcome.  Welcome.

I am a real potato and sweet potato junkie.  Who could ever go without eating potatoes (crazy diets that think this potassium goodness bomb is bad for you!!)? I’m so not ashamed to admit this.  And these stuffed potatoes, two ways, are gonna make you a junkie whether you like it or not.

Sometimes, because burly men in this household refuse to eat sweet potatoes (I KNOW!!!) I am forced to make two way twice bakers.  Because I (and my baby) NEEDED a sweet potato this day, I was forced to be flexible.  And lets just be honest, I’m stubborn and not always the most flexible, physically or figuratively speaking.

But, I find this to be totally versatile because not everyone hearts a sweet tater the same way this lady does.  Although I cannot fathom this, and for that we might not be friends anymore.

Chicken Sausage & Rainbow Chard Crostini


Lets talk about crostini, bruchetta, antipasto, canape, and tasty tidbits.

But lets go beyond just appi hour and go into the whole new realm of dinner.  Yes, these hors d`oeuvres as supper.  And let me say, I cannot get enough.

I live in a constant battle to convince the man I love so dearly that my hair brained schemes that I like to call dinner, are in fact, going to be delicious.  He always asks (usually around 8 AM mind you), “What are we having for dinner?” to which I give my newest Adrienne imaginary creation.  He is usually skeptical, and tries to poo-poo it (I’m so sorry I just used that term, and will try to never do that again).

But, I don’t listen to him, continue on with my plan, and usually my little dinners are pretty tasty.  This was another one of those times when I was so happy not to listen to him.  Don’t get me wrong, this has back fired on me on more than one occasion.  I  should always listen to my husband, but sometimes a girls gotta follow her intuition.  Am I right?

Chicken sausage, toasted garlic crusty bread, swiss chard, and Parmesan cheese!  Holy smokes friends, we’re onto something here.  Sometimes this girl just knows what is good for her man.

Mini Peanut Butter Cup Brownie Bites


I’m back at it again.  With that whole chocolate and peanut butter obsession thing.

I think it’s clear I’m feeling pretty much back to normal lately.  Once that urge for that undeniably good combo came into my brain there was no denying it.

I also found myself mindlessly putting these mini peanut butter cups from Trader Joe’s into my cart last time I was there…sometimes these things just happen.

I loved having these brownies in bit size form.  The outside was all crispy, with a soft center.   Just like that of the corner pice of a brownie, which in my humble opinion is the absolute best part!  These were like an entire corner wrapped into a nice little round package.

Broccoli Parmesan Meatballs


I know, I know.  Broccoli Parmesan meatballs…has she really gone off the deep end, or what?

Maybe, or maybe I stumbled across a secret gem of deliciousness.  Others might try to detest, saying these are NOT good.  But, I assure you, they are.  I loved them and would happily make them again.  I cannot vouch for others in this household.  Other certain men in particular wanted meat, and didn’t get any with these.  But I got a big hug of earth friendly greens with these.

I don’t even think it was the taste that threw the man off.  I think it might have struck a cord somewhere deep in his soul when I referred to these as “meatballs”.  It was game over from that moment on, because these are a faux meatball.

Delightful nonetheless.  And perfect as a main or a side dish to any dinner.
